Brown Fried Rice
Ingredients
2 tablespoons canola oil
4 cups cooked rice
2 teaspoons fresh ginger, minced
1⁄4 cup celery, diced
1⁄4 cup carrot, diced
1⁄2 cup bean sprouts
1⁄2 cup broccoli, chopped
1 tablespoon oyster sauce
1⁄4 cup sweet soy sauce
1⁄2 cup frozen peas
2 scallions, chopped
1 tablespoon sesame oil
2 eggs
Method
1. In a hot wok or large fry pan add canola oil and let warm for 15 seconds.
2. Add the ginger and scallions and cook until fragrant. Add celery, carrots, bean sprouts, peas and broccoli. Stir and cook for 3-5 minutes.
3. Add rice and break up any clumps while stirring. When the rice is no longer clumpy add the oyster sauce and sweet soy sauce and mix until rice is coated evenly.
4. Add the eggs and stir constantly while they cook.
5. Add sesame oil and adjust seasoning if needed.
Serves 6
