cookiesJuniper Roasted Pork
with Brown Butter Sauce

Ingredients
1 Fisher Family Farms pork tenderloin
2 tablespoon canola oil
1 tablespoon ground juniper berries
1 ½ tablespoons fresh thyme
½ tablespoon kosher salt
1 teaspoon smoked black pepper

Method
1. Preheat an oven to 400°F and a grill pan over high heat. Or if using a grill preheat 1 zone for searing and another zone to 400°F.
2. Combine the canola oil, ground juniper, thyme, salt and black pepper. Spread the mixture over the pork.
3. Sear pork tenderloin on the grill or in grill pan until browned on all sides. Place in oven or 400º area of grill and roast for 15 minutes or until thermometer inserted in center reaches 145°F.
4. Remove the pork tenderloin. Allow to rest for 5 to 8 minutes before slicing and serving. Serve with roasted winter vegetables, herb gnocchi and brown butter sauce.

Brown Butter Sauce
Ingredients
8 tablespoons butter
4 tablespoons heavy cream
2 teaspoons fresh thyme
½ teaspoon ground juniper
2 teaspoons kosher salt
1 teaspoon black pepper

Method
1. Heat a medium saucier pan over high heat.
2. Add the butter and cook until the butter has melted and the bubbling subsides. Immediately remove from the heat and add the heavy cream. Add the remaining ingredients and adjust the seasoning as needed.
