Gyoza DumplingsGrillmaster's Porketta Roast

Ingredients
2-3 tablespoons kosher salt
6-8 tablespoons Grillmaster’s Italian rub (Porketta)
2 1/2-3 lbs. pork roast

Directions:
1. Butterfly pork roast and season all sides with kosher salt and Grillmaster’s Italian rub (Porketta).
2. Let the roast stand at room temperature for 1 hour or up to 12 hours in the refrigerator.
3. Preheat a grill to 220 degrees.
4. Place pork, fat-side up on the grill.
5. Top with any loose seasonings.
6. Roast until the internal temperature of the pork reaches 185°.
7. Let stand 15 minutes before carving.
