Kitchen Window's Porketta Kabobs
Ingredients
3 pounds 1 1/2” diced pork loin
3-4 large yellow onions, cut into quarters
4-6 large green peppers, cut into 1 – 1 1/2” dice
1/4 cup grapeseed oil
3-4 tablespoons Grillmaster’s Italian Pork Rub
1 tablespoon Kosher salt
Olive oil
Salt & pepper to taste
Method
1. Place all ingredients into a large Ziplock bag and mix
2. Thread pork, onion, and green pepper pieces onto the skewer alternating until the skewer is full.
3. Allow excess oil to drain before placing on the grill.
4. Grill on high heat until the outside is caramelized.
5. Reduce heat to medium low and let rest until it reaches an internal temperature of 160 degrees as recommended by the USDA for medium cooked pork.
6. Remove from grill and drizzle with olive oil and season with salt and pepper
