Kitchen Window's Sugar Cookies
Cookie Ingredients
3 cups flour
¼ t salt
¾ t baking powder
1 cup butter at room temperature
1 cup sugar
1 egg, beaten
1 T milk
1 T Nielsen Massey Vanilla Bean Paste
Sanding sugar (optional)
Icing Ingredients:
1 lb. CK Royal & Picture Icing Powder
5 T water
½ t vanilla extract or other flavoring (optional)
Gel food coloring (optional)
Cookie Method:
1. Sift together flour, salt & baking powder. Set aside.
2. Cream butter & sugar until light & fluffy.
3. Combine egg, milk & vanilla bean paste. Add slowly into butter & sugar.
4. Add flour mixture and mix until just combined, scraping sides of bowl during mixing.
5. Turn dough out onto waxed paper and roll into 1/2” thickness.
6. Cover & chill for at least 2 hours or overnight.
7. Preheat oven to 375 degrees.
8. Roll dough out to ¼ inch thickness, using powdered sugar to keep dough from sticking.
9. Cut into desired shapes. If not icing, sprinkle with sanding sugar.
10. Bake 8-12 minutes, depending on size of cookies. Cookies are done when edges are very light brown.
11. Cool completely and ice as desired.
Yield: 3 dozen cookies
Icing Method:
1. Mix powder & water at medium speed until icing stands in peaks.
2. Flavor & color as desired.
